I usually cook tomato sauce once a week and keep it in the fridge for my weekly recipes either pasta dishes like spaghettis or lasagna or meat dishes like meatballs or bolognese.

INGREDIENTS
- 1 can chopped tomatoes(1 pound)
- 1/2 diced onion
- 3 chopped garlic cloves
- salt to taste
- black ground pepper
- 1 tablespoon sugar
- 3 tablespoon olive oil
PREPARATION
- In a saucepan, heat olive oil over medium heat and add onion and garlic, cook until light golden brown, for about 8 minutes.
- Add the tomatoes and bring to a boil, stirring often.
- Lower the heat and simmer for 40 minutes until thick.
- Season with salt and ground black pepper.
- Add sugar to balance the acidity of tomatoes.
- Blend the result to get a nice light tomato sauce.
